Better or best ~$100 pan fish filet knife?

My personal Pan Fish filet knife is a North Arms model out of Canada, but my friend wants something good for a bit less cost.

I am hoping some company has started making something better than the common "Walmart" "Blue Light" specials that are not better or worth more than the common options from China under different labels.

I love the bubba filet knives if yall want something you can just get off the shelf. My local rural kings have a display set up you can try them out on. May be able to find them in other stores.

I was very blessed to be approached by an experienced fisherman nearly five years ago who asked me to collaborate with him in designing his perfect filet knife. The Finesse Filet is the result of that collaboration, and folks have seemed to love it ever since.

David, does that mean you’re doing another run or have some in stock?!?

I'm going to read between the lines and answer the questions I think you are really trying to ask:

"How can 15N20 be expected to respond to use as a filet knife". Very well. It is tough so it can be ground exceptionally thin for great cutting geometry, it holds it edge reasonably well, and certainly well enough for use cutting fish. As long as it is wiped dry before it is set down for any length of time beyond a minute or two, it will develop an unique and interesting patina without degrading from rust.

"Why wouldn't you use stainless steel for them instead?" I would. These are left over from earlier on when I had a surplus of 15N20 to work with, and I have been sitting on them for a few years. I have not tried to push them out the door. But again, it will be a while before I stock back up on these in another steel, as I have a number of other projects that have priority. But the next time I run Finesse Filets, you can expect it will be in AEB-L, and/or MagnaCut.
 
That is a great response thanks David! I'd be interested in an 15n20, although I mostly fish salt water on the Pacific Coast a patina would be pretty cool.

I'd be happy to give it a go!

Most of the time we clean the fish at the Tuna Club, pack it, wash out stuff in the sink, dry the blades, throw the fish in the cooler, and take off. I do not live on salt water just fish there when I can. Otherwise I fish in the Columbia.
