Beveled Discs

When you grind on a disc that has a 1 or 2 degree bevel do you grind on the radius with the knife passing over the center, spine parallel to radius, or along a chord ie parallel to a diameter but displaced so as not passing over the center, in other words on the top or bottom half of the disc?

I am thinking of you grind on half the disc you lose the benefit of the radius, but I'm not sure.
 
I'm not sure I understand exactly what you're asking, but I typically grind on the left, horizontal centerline of the disc if you are facing it, with force of the disc pushing the knife straight down to the floor. The disc is beveled so that the tang of the knife will not touch the right side of the disc.

Justin, I was wondering if you grind on the centerline or above or below it, but chose an overcomplicated way to describe :D
