Beyond sharp

I had one of those almost perfect thin polished edges. What do you think I did? I know we have all done it at least once. Yup it was one of those will cut anything in arms reach before you know it is cut kind of sharp. Just one more stroke and it will be the perfect edge. Right? Nope that last stroke just messed up my cut everything edge. Yeah it is still sharp but darn it I should have quit when I said to myself just one more. I do this more than I'd really like to admit. I miss the good old days when a semi sharp knife was good enough. :) I really knew I was over the edge when I used my kitchen knife and thought to myself this knife needs a touchup. Right after I used it my cousin used it and said damn this knife is sharp.

Oh god I HATE when that happens :barf: makes me so upset :mad: It happens more than I'd like to admit and I spend way too much time going back and starting from scratch.
 
Or how about those time when you do a reprofile and as you get to the finishing stages you realize you have a slight microbevel on one side :mad: having to redo what you have already done makes for a long day :(

ldaslfalsdflasdf :mad: Sharpening stuff is pretty annoying sometimes eh?

I always hate when I have to go back to the coarse hone. There has been a time or two.
 
My problem is that even if a knife is sharp, I always trying to make it sharper. Can't leave well enough alone.

I completely agree with you. This always happens to me!! I've ruined quite a few good knives doing this :( Maybe we should start a knife sharpeners anonymous.

It's not just knives. :o Probably most of us routinely try to 'improve' what ever we are doing and screw the pooch by doing so. We can't settle for 'very good.' We feel compelled to aim all the way to 'excellent.' And miss.

I've knocked out more perfect edges than I can think of after spending quite some time sharpening them. I try and take it one step above and BAM, its dull. SO frustrating.
 
Or if you are using a controlled angle system and you are putting a 20* angle on...and you accidentally put it in the 25* angle hole when you switch to a finer stone......:mad:
 
Frustration. I just HATE it when your sharpening your knife, get a call or something and your phones not nearby, and, doing so, you are distracted and fuck up your whole day;s work of sharpening
 
He is another problem. Types of sharpening systems, I have a lansky, spyderco sharpmaker, paper wheels and stones. All work well. I got the stones to learn on them because I figured I needed too. I can get a sharp edge with all systems. I like them all, what to use and when.
