Good luck, man. I understand about the 2nd income going away. Happened to me, too.

The food industry is VERY hard. My sister-in-law went the same route. Never could make a lot of money at it. She eventually gave it up. YMMV. Hopefully.

Culinary School - $34,000

Kitchen Supplies- $4500

New Chef's Hat- $9

A Happy Wife who can cook well - Priceless

For everything else theres MasterCard

follow your dreams, I say....or her dreams if you can tolerate it.....she's put up with you and your demands for how long now.....?

And there lies the problem. If your wife isn't happy at her present job and what she is doing then it will eventually lead to much bigger and more serious problems than wanting to change carrers. You didn't say anything about your ages, but it's getting more and more common for people to chanfe careers, even at near retirement age.
Maybe the Good Life may just be beginning. Think Positive!:)

Does she have any idea what the life of a chef is like ?

She should before making such a big decision.

Maybe she does,
and wants it anyway.

real culinary school = chef as a career

unless one has time & money to burn.

See if she can find an empty corner (no such thing likely)
in a real chef's kitchen
in a quality restaurant
and spend the weekend watching.

It's not Iron Chef or some chef alone in a kitchen on TV.
It's long, hot, hurried, detailed, strenuous -work-.

But then I'm full of it sometimes.

Happiness is very valuable.

Most people do not love what they do, and do what they love... The overwhelming majority are disenchanted with life, suffer from anxiety and depression, and are downright unhappy! I wish your wife success and hapiness in her endeavors. :)

It will be fine. Just see how enthusiastic you can be for her, it's scary for her too....

Unless you are starting a Rockefellow, Kennedy, or Romanov dynasty...what difference does it make, really?

And if it doesn't work out? So what?

However long we get to live on this planet, we ought to savor the shitsngiggles of any situation in which we find ourselves.

Have fun. (See if you can find a bus-boy correspondence course for yourself. If not, make up some documents. Be fun to let her see them.)

Life is too short/long do do something you hate. Besides, if mama ain't happy, ain't NOBODY happy.

Right now I have a kid interning at my restraunt that has just finished at a culinary arts school in L.A.
The difference between school and a real restraunt is HUGE.
He said he be given 2 hours to prepare a dish that would/ had to be made in 20 minutes in a restraunt. He bought the set of knives (some rediculous price) that he hardly used. He did learn how to make dishes look pretty but it took him so long the food was cold before it reached the table. I had to put a stop to that quickly. The food has to be cooked to order, presented well and must reach the customer hot!!
Cooking in a restraunt is physically demanding (huge 60 qt pots), mentally straining (doing 15 meals at the same time and timing them so thay all come up at the same time), demanding (waitress/ customers), intense WORK for most of the time. Sometimes between meals you can goof around, when your not doing prep work, iventoring/ordering/stocking supplies.
You will be burnt, you will be cut, you will have waitresses yell at you (even cry), you will have customers so demanding that no mattter what you do it will never be right or enough.
If you don't have a thick skin and a sizable ego it will be miserable.
The upside....meeting a regular on the street and having him say "I've been eating there for 20 years and I've never had a bad meal!"

You may have a little less money, but you will probably eat a lot better, and your wife will be happier for a while - at least until she decides to give it up and go back to her old job - at a reduced salary.

You are a very lucky man. She will learn many useful skills that will benefit you. At least she's not going for a PhD in Ed Psych. Now that's a little bit of hell on earth. Be supportive, pal. You will eat well, at least.

She could work by day, school by night? Perhaps her co has a deal that would allow her to work reduced hours (16-24 hrs a week) and then go to school on the days when she has classes.

Also, the school probobly has the usual tuiton fees that can be put on a loan. We are about to finish paying the Wife's tuition loan off...only took about 10 years.;)

Bran,

Which school is she planning on attending? We have an excellent one here in Louisville, and I may be able to arrange for her to shadow a chef for a day to see if she is interested.
