(big?) folder for food prep?

Every year I go on holiday and end up using horrible cutlery for food prep.

Sometimes I camp, and every year rent an apartment in Italy to visit my (Italian) wife's family.

Last time the cutlery was so crappy, I cooked with a friggin' Leatherman!

As a true knife nut, I'll grab any excuse to buy a new knife.

So tell me, what would be a good knife for food prep? (and other utility tasks)
 
Spyderco Resilience would fit the bill well. Great slicer, super high value and big enough to handle most kitchen tasks.
 
Boker has a series called "Outdoor Cuisine" I have the #3 on the way. It was only $15 though, so I don't know what to expect.
 
Oh, I have my mind on a XL voyager.
Any experience with the "stonewash" finish?
Can it flake off, like those black coatings? (I don't sniff paint, why would I want to eat it?)
 
Pretty much anything with a long, thin blade should work well. Lots of Spydercos fit the bill (Military, Para 2, etc.), as do some Benchmades (e.g., Bedlam).

Stonewash is a way of finishing the surface of the steel, not a coating, so you have nothing to worry about. :)
 
The Spyderco Rock Lobster is kind of a folding kitchen knife... awesome blade shape/size for food prep!

You could also pick up two or three different sized Opinels for much less and be equipped to tackle any cooking/food prep chore!
 
The new XL Voyager clip-point works great in the kitchen. A Rajah II works surprisingly well too; made short work of a pineapple for steak kabobs. The Military and Endura/Pacific Salt also work great as long as you are not slicing anything huge.

I have a real nice set of kitchen knives, but I'm always using different fixed-blade and folders in the kitchen just for fun.
Nothing cuts a watermelon like a Junglas.

They're probably incredibly difficult to find, but be on the look out for Kevin Wilkins' folding Ryback kitchen knife

When traveling I usually carry a Rapala fillet knife. Cheap, gets really sharp, easily replacable. I used to be a fishing guide and have done lots of food prep with just a fillet knife. Personally I would not use a folder extensively for making food. Tougher to clean on the go and tougher to get dry in a hurry. Just my 0.02.

edit: I have also carried a Buck fillet kife in a hard plastic sheath. I'd also look at some of the Mora knives. They make some exclusively for the food industry.
 
Spyderco military. I've found it to be an excellent paring knife. It has a very thin edge and a distal taper that makes it a mean cutter. About the only thing it can't do well is mince garlic and herbs. But then again none of the knives listed so far would do well at that.

My Rock Lobster would beg to differ... ;)
 
Spyderco Military.....excellent full flat grind, lightweight, open construction for easy cleanup, fine tip and plenty of belly on that 4" blade.
