i have see him use a Kershaw Leek in many episodes, the one I am watching tonight is S17, E5 the Great Lakes, the sheath blade on his hip looked like a Randall, anyone able to verify what knife it is? What other knives have been identified that he uses?

Ive been trying to identify it as well, keep seeing him use a green handled folder that I just cant identify...hmm
 
He uses the Leek most often, but, in addition to the Sardinian Resolza mentioned above, I have seen him use a Buck Vantage.
 
Zimmern is quite a knowledgeable food guy. He has been a fixture on the Twin Cities food scene since shortly after he moved here from New York a quarter century ago to dry out at the Hazelden Foundation. He was executive chef at one of my favorite restaurants in the ‘90s. Later on, I used to see him prowling some of my favorite Asian restaurants in Saint Paul. The man definitely has good taste in food. The bizarre foods thing is schtick, although it has made him some dough.
 
Love that show. I’ve seen him use a folder a few times and always wondered what it was.
 
Apparently Andrew is a knife guy. I'm a fan of his show and have learned tomato some good dishes from it. But I've seen him use a wide variety of knives ranging from his often used Kershaw, to a Sardinian resolza to a German Mercator K55, to even an Opinel. I've seen episodes where he's using a knife I've never seen him use before and can't identify.

I think he's one of us.

He's right on about the Sardinian resolza being one of the finest pocket knives in the world. I've been using this one more and more and more over the years, and it's a fantasist working pocket knife. Made by Salvatore Usai of Sardinia it cuts like a razor, is light weight in the pocket and full flat ground blade. Handle is the ubiquitous Sardinian goat horn and feels great in hand. These are strait friction folders, but once you get used to them, they spoil you badly.



It's not a tactical wonder knife for stabbing enemy sentries, but I've used it for everything from cleaning fish to opening mail to cutting twine for the tomato plants out back to cutting electrical tape. It's a great little cutter.
