I know there are a lot of threads on modding beckers, but I haven't been able to find this question..

Well, because of the weather all the stores around me are closed and I don't have access to paint stripper, but I do have a lot of sandpaper.

If I sand the coating off rather than waiting to use paint stripper, would the sandpaper end up taking alot of steel off with the coating? What is the advantage to using stripper besides the time factor ?

In my opinion there are 2 advantages to stripping VS sandpaper. 1 you mentioned, its faster and easier to strip it with paint stripper. The other is the appearance. The metal when stripped looks better. Its not all scratched up and is easier to get that smooth shiny clean look.



It wont hurt it to sand by hand. You can do it that way if you want. Just takes more work.
 
It won't remove steel unless you keep sanding after the coating is gone. The thing to keep in mind is, you will want to dull the edge a bit with said sandpaper, so you don't fillet your hand while stripping the blade. It will leave scratches, be difficult because of the lack of real estate to get a firm grip on, and the sharp transition where the grind starts (plunge line?) may be tough to get perfect.

I'm sure someone who's done it will be along shortly, personally I like at least a good sized handle on something I'm sanding. (I suppose if you have a vise this changes). Also, perhaps entertain the idea of leaving the handle coated, as hand sweat loooves to corrode carbon steel, and (well at least my) main reason for removing the coating is cutting friction/stuff being caught in coating.

I hand stripped mine using only sandpaper. I proceeded to polish it using only sandpaper. Stripping with paper will take a lot longer, and getting it to where mine is will take tens or more of hours.
In pic 1, that is just some bark, not a chip.
