bk5 or 15 for processing deer?

All,

I have been looking for a good skinning/deboning knife for processing animals in the field. In looking at both of these knives, i personally think the 5 would be too big, but am looking for suggestions/experiences for both of these knives. What do you guys think?

Quick story.

Last season here in Michigan, a group of 9 processed 12 or 14 deer in about 4 hours. My job was to skin and quarter the deer while a couple of the teens moved the bodies around and hung them for skinning. I started out with a victoinox boning knife but it dulled quickly while skinning the second deer. I put it in the pile to be sharpened and grabbed the BK15. The 15 was used to skin and quarter the rest of the deer without any sharpening with a steel or stone, only a quick strop about 5 or 6 deer into it.

I don't have any experience with the BK5, so I can't say how it would work for deer processing. I would think that given its size it may be well served for quartering and the actual butchering, but I'd think it may be unwieldy for the skinning process.

The word is that KABAR is not going to be making any more of the 15 or the 5 so just get both before they are not available.;)
 






Thinned the edge on my customized 15 and its soooooooo sharp. I really need another one that doesnt have such sentemental value to me.
 
15 is all the knife you need and will be far better for caping. That's what I'd go with. Though 5 could work too.
 
You MUST own a 5; but use the 15 for field dressing or skinning a deer and even for cutting up meat. And then you can use if for a steak knife when you eat said deer! :)
 
Thank you for all of the advice guys, as normal, lots of great info here. I think I'll go for the 15 for hunting, then catch a 5 down the road. I read where both were being discontinued, so hopefully I'll catch a 5 before that happens.
 
I deboned my deer with a 24 last year -- while I had no issues, the 15 would be a better choice IMHO.
