bk5 or the bk15?

With Christmas around the corner, I am starting to prepare to make lots of jerky for snacking gifts. I have used a meat slicer in the past, but the jerky comes out better if it is hand cut. I am wanting to get a new knife for this that I can also use outdoors. I am torn between the BK5 and the BK15. How many of you use these knives in the kitchen? And do any of you have both these knives and which one do you end up carrying on your hip the most. Thanks in advance guys!
 
I would say it depends most on what size meat you are cutting... Either one I'd recommend stripping it cause with the new coating it makes it a little bit harder to slice through.

I have both, I have used both in the kitchen. For slicing lots of meat at once I use my 5, although I will start using the new kitchen knives. When I'm at the restaurant I keep the 5 on my hip. But when I'm going out for just a good steak I carry the 15.

I probably haven't helped at all except for suggesting getting the new kitchen knives.
 
Chameleonbear, do you find much difference in the comfort of the handles? I cut enough meat in one setting that I need to stop and rest my hand when I use a wooden handled kitchen knife. So handle comfort might be something I need to think about. Good point about stripping the coating!
 
I recently got the 15 for kitchen duty. It's great for slicing small amounts, but now I want the 5 for its longer blade... More slice for the length ya know. Definitely gotta strip it either way, the coating causes too much drag.

The handle on the 5 would be larger so you wouldn't have to grip it as tightly.
 
What kind of stripper are you using? That sure looks like it works better then the stuff I've used before.
 
8" blade on the 5, 5.5" blade on the 15
how big is the meat you'll be cutting?
The 5 covers more territory, but it also weighs twice as much.

might be there's one of us fairly close that would be willing to let you spend an afternoon with one or both to see which works better for you.
 
I have never used a slicer for jerky but it must be good at least for consistent slices. A good fillet knife works well for slicing thin slices. My jerky attempts have been less than stellar though. Codger makes jerky he might have some insight.
 
I have both, and for slicing meat I find the 5 to be better. I get less hand fatigue due to the larger handle, and the longer, wider blade will give you better slices.
 
You really need one of each. Seriously. Once you do, you will know why. Then you will tell others the same. :D
 
Ha, ha TwinStick! I just might do that. And thank you Eero for the comparison photo. And thanks to all of you for your input. I think that for a pure meat slicer the BK5 will be my choice. I could live with the smaller blade of the 15 but the handle of the 5 has won me over. But like TwinStick pointed out, I might have to own them both someday.
 
I am hoping to dress a deer with the pair this year. I am not a very good hunter but my friends who are, sometimes have pity on me & give me one when i don't get one myself. :D
 
you can really pressure cut, but safely with either. they won't break :)
 
I like having both just in case I need the other one.


That being said knives are $$$ so if I could only have one it would be the BK5.
 
A Bk5 has been ordered. When it comes in I will put some pictures up. Before and after mods, ha, ha. Such a busy time of year for me though, so it might take a little while to get it fixed up like I want it.

I almost ran over a dead buck in the road about a week ago. There's aren't deer too close by so someone must have not tied it down well enough.
 
Good call on the five. I carry my 15 when im hunting only because i hate wearing a belt and i can just shove it in to my pocket. I wear my five when im hiking with my pistol and not carrying a rifle. I find the larger blade and handle are more user friendly.
