Blade Angle for Sharpening Busse Knives

Tried to do a search and got a blank screen so sorry if this has been discussed to death.

For a small (GW) to mid sized (Mole Jack) non-chopping knife what angle can Busse knives be sharpened to without making the cutting edge too thin that it rolls (drastically) if it encounters something hard like bone?
