I just bought a Ken Onion knife sharpener. With angle adjusting ceramic rods.
Question.......I own Benchmade, Buck, Kershaw, Hogue knives and other name brands.
How can I find the right degree to sharpen properly?

I think each brand probably have different sharpening angle, for example Benchmade is 30-35 deg inclusive, Buck is 13-16 per side, etc. You probably could find these info on their websites.

Since there is always variation, even on a factory edge, one of the ways to find out whether you are sharpening at the same angle from the factory edge is probably to use a black marker to mask the edge and see whether you are sharpening at the corresponding angle and apex correctly.

Take a Sharpie to the edge and see what angles take all of the Sharpie off. Run with that angle for that knife.

Every different knife, even from the same maker, and even of the same model, can have different edge angles. If you like the angle on it already, do as stated above. If you like a different angle, just sharpen at the angle you like until you apex.
