Just how are blades coated? In particular, what exactly is a Parkerized finish, and how is it done?

All blade coatings eventually get scratched up, so how can I learn to re-coat any of my blades? - In particular I am interested in learning to coat blades with a matte black parkerized finish like some Kabars have. I am also interested in making knives and want to learn how to apply coatings to blades.

Your help is greatly appreciated.
 
I can't tell you about parkerizing blades, but I can tell you about 2 other coatings. Carbon steel blades can be blued and bluing stuff can be found relatively easily. The other easy method that I have seen is purchasing rhis spray lacquer stuff from knife supply catalogs (or at knifeart.com). You spray it on and bake in the oven. It comes in a few colors too!

I'm having some knives made by Jerry Hossom, and they will be PVD (Plasme Vapor Deposition, I think) coated with AlTiN by a third-party coating firm.

You'll get best results going to a third party. I read somewhere about one awhile ago that'll coat blades in a variety of colors with one of the new, long lasting, tough, coatings.
