Blade Polishing

I recently purchased a pre-handled (curly birch) Enzo Trapper. I would really like to polish up the bead blasted finish. I was thinking about taping off the handle and using 800 grit sandpaper to 2000 grit and finish off with MAAS paste with a hand drill polishing wheel. Should that technique work ok?

It depends on the type and quality of the steel.
Some steels have an "open grain" and are hard to get that kind of mirror polish you're going after.
Start with a "brushed look" with 320 or 400 grit and gradually work your way finer.
