Hi Everyone. I'm new here, and just a wannabe chef who loves a sharp kitchen knife.

I recently inherited a 14" Sabatier carbon chef's knife, which has been mistreated. There are a couple of swales in the cutting edge. What is the technique for fixing such a blade? Do I need a professional?

what do you have on hand to sharpen with? some knives can take a little or a lot of time to fix chips or a bent spot. if its a bent spot you might be able to straighten it out but more than likely the spot will break. if its a chip, you will have to sharpen it out.

for a cheap way to sharpen you can use a piece of glass with some 3m brand wetordry sandpaper laid on top. the grit you get for taking out a chip depends on how bad the damage is.
