Had rare strip steak, used my delica with zdp 189 now its stained, how to get rid of it...is the question

Sounds like a natural patina. I know it bothers some and there are others who work real hard to make it that way. You could try Flitz metal polish by hand first and or with polishing wheel on a dremil tool. Last resort could you sand paper working through the grits. But that would be a lot of work and you would have a mirror polish when done (may not be desired.)

Flitz will take care of patina. I like patina but I use Flitz to restore the shine to the tang of a folder near the pivot.

Don't let the staining discourage you. It will stain for sure with acidic stuff and the proteins in meat juice. ZDP-189 is an awesome steel and holds a working edge forever. Just don't take the edge down too thin...
