Decided to strip the 311 and 411 today.
The 411 had a gold finish and the 311 a pinkish orange finish.

Painted citristrip on both then waited an hour and then used an old chisel to scrape them. Got down to the decarb layer and decided to aluminum oxide blast the 311 and
use the air tool with scour pad on the 411.

The 311 was extremely rough after the blasting and decided to sand it with 400 grit sandpaper to knock down the roughness. Also sanded the 411 with 400 grit.

Used cold gun blue on both the 311 and 411. They both look good. Not sure how either one will hold up to rust but will keep them oiled when not in use. Hope to give them a workout this weekend and see how that blueing holds up.

If the 311 does not rust any faster than the 411 I will blast the 411 sand a little and blue it as well.

The Blasted Blued Blade is the 311 on the bottom. Both are very sharp.

I wonder what would hold up for longer, the gun blue or the original coating.

Good lookin blades right there!
 
Probably the original coating will be tougher the the gun blue but it's really easy to rub a little gun blue on when needed for touch up and those two original coatings were hard on the eyes.

They really look and feel good with the gun blue. The original coatings were so thick I would think it would have slowed the cutting down.

On a side note I will not blast INFI with Aluminum Oxide, it's way too rough of a finish. Glass beads for INFI.
 
Just don't use them for too much food prep mate. Gun blue is not food friendly from what I understand. On stripped SR101 I prefer a natural patina.
