Blued blades and food prep

I've read a bunch of posts saying that you should not use cold blued blades for food prep because the bluing solution is toxic. It doesn't make sense to me because once you're done with the bluing process, if you wash the blade, all you should have is iron oxide, right? So it should be safe.
