I received the Bob Kramer Shun presentation chef knife for Christmas. I was cutting a piece of ginger today, and a piece of the cutting edge folded back on itself, leaving me with a triangular nick in the cutting edge. I thought the piece was still in the food, but when I looked, I saw that it was still attached to the blade. Has this ever happened to anyone else?

Unfortunately, a weak factory isn't that uncommon. You may be able to return it, or even better, have it exchanged, which would give you the opportunity to get a much better knife.

The Kramer Shuns are very 'chippy'....when Williams-Sonoma discontinued them several people in the kitchen got them on discount and very shortly I wound up sharpening out chips in just about every one of them.

A lot of brand new blades are chippy. Has to do with factory buffering I guess, and should disappear after a few sharpenings. Not so sure we have here to do with that common form of microchipping though. Looks more like very poor HT.

The manager at a Williams-Sonoma store (my wife...great discounts! :) ) mentioned that the edge is a major reason why there are no longer Kramer Shuns...and the reason they were so heavily discounted to move 'em out the door at W-S
