Boker Joint cutting tool

Made a good buy on a Boker,I'm guessing a chef's utensil for cutting joints on a cut of meat.It's stamped H.Boker,Solingen Ger.55.It's stainless,10 inches overall,blades measure 4 inches each with a slight curve to the blades.One blade is serrated and the other is smooth.The handles each have a piece of 2 inch stag inlaid in them.A very nice looking piece.I picked this up at an estate sale for $8.00.Would like to know when this may have been manufactured and approximate value if anyone might happen to know.Thank you.
