Well guys and gals, my main large kitchen knives are the Fallkniven pair which I love. And I have owned a lot of paring/ utility knives and keep a pile of sharp ones. But this Boker titanium model is something else. I was making paper thin slices of tomatoes, cutting meats and veggies and the knife seems to just eeeeeease through anything with a very nice feel.

After a week of heavy use, I can report that light stropping on plain leather has been more than enough to keep it hair popping sharp. I expect to steel a knife like this and stand ready to... IF IT EVER NEEDS IT!

Thus, you need to check. I still have a few left (new that I haven't given away) that I can probably make you a deal on if you must, but I think they make a GREAT gift and everyone that I have given them to is in love with them.

I'd like to hear about the othe BOKER Titanium kitchen knives.
 
How hard is the Ti? The edge retention and cutting ability you note, this is significantly higher than for the other paring knives you have used?

I am guessing it is about Sebenza level of hardness... excellent edge retention but I am expecting a little EdgePro time when it really needs sharpening. But I rarely do that with my Sebenza which I strop almost daily and hit on a ceramic rod or a smooth steel rod every few days.

maybe someone else has the facts....
