It was Roger Moore in "A View to a Kill," and this one ends up in a blimp.
Perhaps you're thinking of "The Living Daylights?"
The knife, I suspect, and I'm not sure having not watched that one in several months, was a K-Bar.
"The Living Daylights" is one of my favorite Bond flicks, great plot, and it has several of favorite Bond scenes:
When they get Koskov out of Russia in the pipeline cleaning pig (the woman who helps them with that is one of my favorite Bond bit parts).
When they arrive unexpectedly at this fancy hotel carrying only a cello and Bond walks up to the desk and the clerk says, "Ah, Mr. Bond! Will you require your usual accomodation this evening?"
"No, Hans, something with two bedrooms this time."
"Ohhhhhhh, shall I have
two vodka martini's sent up?"
"Shaken, not stirred."
"But of course."
It's a silly little scene, but I like it for the whole attitude it projects.
The fight in the jail is one of the better Bond fights. (The fight on the train in "From Russia With Love" is great too.) The fight in the kitchen is good too.
And the Austin Martin car is the best Bond car of them all (the Lotus from "The Spy Who Loved Me" was a close second with Goldfinger's Pierce Arrow bringing up third by a narrow gap). The new BMWs are cool, yes, but not classic. Though Q's presentation of the car in "Tomorrow Never Dies" is another of my favorite Bond scenes.
"Will you require collision insurance?"
"Yes."
"Property damage?"
"Definitely."
And speaking of the car, the car chase in "The Living Daylights" is great too.
"You've pickup the police band!"
"Must be an atmospheric anomaly."
"What happened?"
"Salt corrosion, I suspect"
"Amazing this modern safety glass"
"What's that?"
"I've had a few 'optional extras' installed."
So, rent "The Living Daylights" this weekend and see what you think the knife is.
