Here's a boning knife (or stiff fillet knife) recently finished up. It was a custom order for trimming brisket. The blade is 6 1/2 inches a203e,nickel and 52100 core ( pattern weld,Go mai,San mai?) with a coffee treatment,handle is curly koa with stainless pins and the bolster is carbon fiber with g-10 pins. First try at a knife like this and i'm very happy with the result.
