Bonvivant Professional Kitchen Cutlery Set by Kershaw

Hello, I'm just looking for some good knives to replace my dulling and over sub-par OXO and kitchen aid knifes, I'm looking to stay in the $100-200 range and don't really want to go higher. I found the Kershaw Bonvivant set on GPknives and thought they looked grand, I have owned a few Kershaws and thought they were great EDC knives. Do they make good kitchen cutlery.
 
by hand with a water stone and a honing steal...these knives are pretty beat up and I just have the two A santoku knife and a Chefs knife. the Kershaw appeal too me because they have a wider selection of knives I could work with when cooking. I admit I'm not the best at using a water stone but again the knifes I'm using have no tips on them and have rather large chips in them.
 
If I remember well the steel is the same as with the KAI Wasabis, and I found it frankly unpleasant to sharpen. Hard to raise a burr, hard to chase it, some plasticity: huge carbides I suspect. Compared to this stuff sharpening Global's Cromova and VG-10 is just fun.
By the way: do you really need a whole set? With your budget you may get an outstanding chef knife, and add a mid-price bread knife and a parer.
 
Yeah you're probably right. the whole set is appealing because it's not just me in the kitchen. I just spent the better part of an hour sharpening my main knife and it's got a pretty good edge on it...I can't do the shaving test as I just cant be shaven by a knife, seen it done, tried to do it with said knife but it didn't happen...thin hair maybe. It's almost razor sharp I would say but the steal is so cheap is loses its edge in a week or two of chopping.
