Today I ordered a Professional model Edge Pro sharpening system. It is said to arrive here Wednsday. Can't wait. I can just picture all those crispy edges that my knives will obtain!

Congrats on ordering the EdgePro. Those puppies are rock solid on repeatable angles. I went for the Apex model and find it amazingly good for reprofiling an edge, since I like my cutters/slicers with thinner edges than they usually come with. Once you get that polished edge, they seem to restore with little work. Enjoy.

Wise decision my friend!
I bought one several months ago and love it.
However, it's so good, that once I reprofiled the angles on my knives with it, all that is needed is the occasional touchup with the Spyderco Sharpmaker. I never let my knives get too dull, but if I do, the Edge Pro makes quick work of it.
One thing to be careful of though: with blades that have a nice finish, tape the sides to keep the slurry from scratching them.
That 4000 grit tape that they include is amazing stuff to play with. I really have no use for it though. Oh well, maybe I'll sharpen my Sebenza with it so I can shave in the morning.
