Breakfast Sammich

I don't always have breakfast, but when I do, I prefer a sammich. Note, breakfast can happen any time between wake-up and noon.

First, start with some meat with plenty of fat in it, the eggs will need that later. This is summer sausage, but a breakfast sausage is even better.


Brown in cast iron.


Next, onions. Because I don't like people inside of my personal bubble.


Flip sausages, Maillard reaction is in the house!


Repeat with onions. The goal is to char the outside just a bit, but leave the center pungent.


Begin assembly. Toasted sourdough, swiss, stack half the sausages first, then some onion.


Chicken embryos. I like them over easy.


Complete assembly. Egg.


Then the rest of the sausages and onion. Finally second egg on the ceiling.


Stacked and sloppy.
 
I used to grill summer sausage on my george foreman grill. Oh my gosh that was good. I could cook almost anything on a GF.

I didnt know they came so thin. I might have to add one to my set. .

and epic sandwich btw, I just ate and it still made me drool.

I didn't think it was enough use of Becker knives for your contest, plus it's not my best work. Consider it a test run. I plan on something a bit more choppity, and cooked outside, for my entry.

If you haven't tried it, cooked summer sausage is a completely different food from raw. Not all sausages work well cooked. I've tried sopressata, it was OK, but better uncooked. Bologna (at least the Oscar Meyer kind) tastes like a hot dog once cooked. I'll have to try the Lebanon Bologna.
 
That looks like all kinds of yummy awesomeness right there! Gotta love a big, fat, messy sandwich (sammich:))!
 
I've been making egg white (yolks go to the wife's cat) sandwiches with thick cut hickory smoked bacon, peanut butter and Tillamook Cheddar, on toasted daves killer bread. Holy crap they are good. No, that's not a beer belly, that's a sandwich belly.

I almost forgot. You have to add copious amounts of crushed red pepper to the egg white when cooking, really sets of the bacon and peanut butter. mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm
