Briar burl for knife handles??

I have several pieces of briar burl blocks from when I had woodworking ADD and decided I wanted to make briar tobacco pipes in college. Each piece has beautiful figure and I have been wrestling for awhile on whether or not to have a piece or two stabilized and dyed for a knife handle. Has anyone used this material before? I know it is stable and resistant to heat but I haven't seen too many knives handled with briar.
 
If you google it, you will see some great looking knives using it. Get some stabilized and have at it.
 
Randall used to make some briar burl handled knives for dealers like Stoddards in Boston. They looked great, but I was told that it was not easy using that wood. You also see some Laguiole knives in briar.

Groy87, Do you know where I could shop for some blocks of briar? I would love to use some for some hunting and camp knife designs. Thank you, Larry
 
I've used briar on a few occasions, raw not stabilized... It is a delightful wood to work with, I would use it more but it isn't easy to get.
