Bringing back to life an old family favorite

I'm restoring an old kitchen knife. (You know the one that lost it's edge a long time ago, but never left the knife drawer.) I just finished up putting a new edge on it, and I can't ignore that the handle needs some TLC as well. Any suggestions on restoring wood that will be washed alot?
 
That's kingwood. Just give it a little sanding and polishing.
 
I would sand and polish, then use an oil to seal and protect the wood.

I got some block cream for my cutting board and it is good stuff. I also have some other wood finish oils that I use on my handles. After a good polish and some oil treatment it will be good as new.
