I just took my salt to Mexico from the states. I dont know Mexican knife laws, but you should be ok to put it with your check in luggage. Not your carry-on of course.

I check my knives in my luggage on every flight. Taken them to Australia, Europe, Hawaii and Carribean and never had a problem.

You won't have a problem bringing the knife in to Australia in your checked in luggage, but you should be aware that Australian knife laws are quite restrictive. Essentially, it is legal to carry a knife if you have a genuine, good reason for having it. The reason must be specific ie. not 'I carry it to cut things', and self defence DOES NOT count as a good reason. So if you're carrying it specifically for marine activities you shouldn't have a problem, but it would be illegal to carry it whilst going out on the town at night. That's not to say that people here don't carry regularly and without a specific reason, but if you were stopped by the cops and they found it you could be charged with an indicable offence (ie. a felony).

What if it's a Swiss Army Knife? (OK, a pretty large Swiss Army Knife)

As others have said you won't have any problems with Australian customs and a knife like the Salt. I regularly travel overseas from Australia and usually buy a few knives from wherever I go. It is a good practice to declare the knife on on your Customs statement. The form asks if you are carrying any type of weapons (including knives). If you say "No" and you strike a customs officer having a bad day then you might have a problem. If you declare it, it will only hold up your entry for a few minutes and you won't have a problem. This advice was given to me by a customs officer and I have always followed it and never had any worries. I wouldn't worry about declaring something like a SAK but would do so with most other knife types.
