Anyone have any experience with these "bristle" or "kapoosh" knife blocks I've just started noticing? Something like this? I guess my three main worries would be maintaining sanitary conditions, protecting the edge, and keeping errant moisture away from my carbon steel knives.

I bought my wife one of those for Christmas last year. We are very happy with it. Holds more knives than traditional slotted blocks. Most of the knives in it are Wustof, so I can't comment on corrosion, but we always clean and dry the knife before putting it away. No effect on edges that I can discern. As far as sanitary comditions, it should be better than a standard block. The whole bristle block drops out of the bottom of the wooden shell, so you can put it in the dishwasher; but we haven't felt any need to.
