Do any pictures of theBuck 112 category I version II with a stainless steel holder exist?
I have searched "Buck 112 Category I Version II" and similar searches and found nothing.

If you mean the radiused edge, they did a great job ruining the knife :) I like the old style 90 degree edge, gives good purchase in the hand. Find it hard to stomach when one of the good ole ones comes back from Buck that way, but I'm an outlier :)

And I prefer the rounded edges.
In fact I'm contemplating having someone radius the edges of my 113 ranger.

That’s one thing about the older versions that I’m glad were changed. I prefer the radius corners on handles, they are much more user friendly when you have a lot of cutting work to do or when cutting heavy, tough materials and I’d probably get an older version done that way if I had one. The only sharp edges I want is the cutting edge of the blade.

I like radiused edges on new Bucks, but I don't mind the older style.

I' m an outlier in I think the spa treatment devalues an older knife. My 3dot was dirty, scratched, and beat but still fully funtional w/o the spa. Soap, water and flitz was all I did.

However, the radiused edges and thinner or dished bolsters of a spa treatment tells the savvy collector that pretty old knife has been messed with. There are a lot of sellers who don't disclose a knife's been worked over.
