I'm thinking about getting a Buck 583 Boning knife with micarta handle, but I'm not seeing many reviews or non-stock images on the web. Anybody own one of these and able to share some pics or give an opinion, with particular attention to edge-thickness and ergonomics?
I'd probably make/buy a custom sheath for it. The knife would be used for butchering goats, sheep, deer, and may also see some kitchen use. Here is the webpage: http://www.buckknives.com/product/harvest-series-boning-knife/0583BKS-B/

My cousin has one of these. We used it to butcher 2 deer this year. Absolutely love it. His only gripe was that he wished it had a leather sheath. He used it to gut his deer too and he loved it. I only used it during the butchering. So take my opinion only for the butchering part. Feels good in the hand and is quite nimble. We didn't have real big deer this year, but average size. He has the new open season boning knife on pre-order because of the extra length, that extra inch or so would make getting the hams out easier.

Hope this helps.

That does help, and thank you for responding so quickly.
I like this model specifically because it is shorter than the new one and the micarta reaches closer to the blade heel... just not sold on the handle shape and surprised I haven't read/seen more about the micarta series...
