I need to buy some new kitchen knives and saw that buck makes them. I am a huge fan of buck and was wondering if anyone has any experience with them. I noticed they are made from 420hc; shouldnt they be made out of something a little better?

Thanks,
Allen

420 hc is not a great alloy but buck to my knowledge has a process that gets real decent performance from this steel. maybe they are the only company that does something to make this marginal steel perform real well.--dennis

420hc, not so great relative to premium blade steels but its nothing to sneer at when compared to what is in the average Americans kitchen. If your a big Buck fan go for it. But for $320 (retail on Buck's site) for a 13 piece set I'd look at piecing together a set of Shun's.

Depends on the knife (the steel appears to vary) but comparable to the Buck's 420hc. Unless you absolutely have to have a western style handle take a look at the Kershaw/KAI Wasabi line of kitchen knives same ballpark price wise.

I'm heavily invested in Carbon Steel kitchen knives now, but the Wasabi or Shun's would be what I'd be picking up if I started over. Wustof and Henkels are bring out stuff in better steel but it remains to be seen.
