Has anyone tried the Avid boning as a fillet knife? I'm wondering how it did? I'm looking for a nicer fillet knife.

They just might, depends on how flexable the blade is and I don't have one to see. I do know that the shorter ones make great trout cleaning knives.

I'm a fanatic of Ergo Hunter Pro.
I used to use this knife for about one year, but usually for meat, or as universal knife.

I am not sure if anyone here ever bought the boning knife. I do recall that Gordon had a thread on it awhile back, and no one ever posted pictures or comments about it then. I prefer to use a 123 myself, but never treid the boning knife. Sorry!

I have to admit to an interest but not an action towards owning the boning knife. Maybe one day. I probably need to handle it first.

Nothing like reviving a thread that contains trout blood....I pulled the trigger on an Ergohunter boning (sandvik) knife. Very little talk of this knife here on the forum. Anyone care to share their experience....if any?

I do not have one, but i do have one of the Silver Creek series, which also has a few fillet knives it. I just got the "Bait Knife" in the Silver Creek series. I really like it. I bought it because it was the first knife i have seen that, IMHO, did the serrations right. I don't have a lot of use for serrations, but if/when i do, that 1.5" that most Mfgs put on thier blade, is not big/long enough & totally wrecks the plain edge side of the blade, but thats just me. On the bait knife, the entire top of the blade is serrated & stops about an inch from the tip, where it gets thin/er. Was not real sharp from factory but is now. Shaves paper & hair. Handle is good & grippy, probably even when wet. Great buy for the money. Check out the Silver Creek series, they are a good value.

I'm glad this is up again. My nephew and his buddy are doing some deer processing on the side and he is complaining that his current filet knife doesnt do the trick(cheap). I checked the Silver creeks but they look more like fish knives and it looks like they are the 420J2 imported steel. He is worried about holding an edge. I thought the Ergo boning knife in Sandvik would work although I was hoping the Pro would be S30V. Hope someone has some feedback on them as a filet knife.

I have never used the Boning knife to filet any fish, because it is much stiffer then the Silver Creek blades when it comes to flexibility. May not be the best substitute for a filet but it is a very very good boning knife.

Looks like none of the regular's have tried out the Ergo Boner. I would take the plunge for one if in the Pro series.
Interest seems mild so S30V is unlikely.
