I've had the better 'twin' Henkels kitchen knives set for a few years and have been relatively happy with them, but still using some junk pot metal steak knives that need to be sent to goodwill.

What do you all suggest for a decent set of steak knives? Maybe under $50 if possible. Serrated or not? I've got a paper wheel setup so keeping sharp should be an easy task.

Thanks.

Lionsteel has some nice one with wood handles, not too expensive IIRC

EDIT: Ok, they are 106€ for a set of four, so maybe a bit expensive

Opinel paring knives for me. They come in carbon and stainless, I've got the carbon.

Big red, I'm in the same boat. I bought a crazy expensive set of wusthof culinar steak knives. They will not last long on ceramic plates. I too am on a quest for good steak knives. I think serrated is the way to go because no straight edge will last on that hard a cutting surface. I love to sharpen but maybe just because it's a "kitchen" tool, it's not as fun for me.

I think serrated probably the way to go. I'll look at the various Victorinox offerings.

I like my US-made Chicago Cutlery steak knives. There is a BIN set of six (with block) for under $5o on a certain auction site right now.

Serrated is the way to go for steak knives, but is hard to sharpen with the paper wheels. The Spyderco system is better with the fine edge stones. It is not impossible to sharpen with the paper wheels, but I have found that it is a pain to sharpen serrated knives without damaging the wheels. They do make a 1/4 inch wheel that would be better for this job, if you don't mind changing out the wheels or use a dedicated motor. JMO

Blessings,

Omar
