I'm in the market for a new nakiri. I have a stamped $16 POS that I got on amazon to test how I like the blade shape. Turns out I absolutely love it!
Not really looking to spend much more than 100, and have been looking at Tanaka, Tojiro and the brands on that same level.
Wanting full carbon or laminate blade, not stainless.
Would prefer a medium blade height around 6 inches.
Any one have any good recommendations?
Blue #1 vs blue #2 vs white vs super blue?

I suggest the Takeo Murata (Buho) Nakiri. Aogami #1 san-mai with laquered kuro uchi. You can get it with a traditional handle on Epicurean Edge, or a simple handle on CKTG. Here's mine from the day I received it:

It's about $90, though CKTG is sold out.

Kumadori, Yasuda Cutlery for $90. Model YS-902.

It is Sandvic 19C27 and a very good knife.

I have one of these and it works well, though the fit and/or finish of the knife does leave something to be desired. The edge is slightly curved laterally (side to side), and there are definite "overhammer" (where the indentation from a hammerstrike is significantly below the local surface area) areas on mine that make me slightly concerned that later in its life I may have to finagle a different edge center to account for these.

The grind is ok - though a bit off on mine - but is acceptable if you take into account what you are getting for the price. I, too, thinned it out though I did it primarily to help fix grind issues near the heel.

It was worth the price I payed for it (~$78ish if I recall correctly) though if it is now near $100 I think there might be some other options I'd look into, like the Zakuri nakiri.

I had written up a glorious tribute to wabi-sabi, and my browser ate it, so I'll sum up: The high spots can clearly be seen here (pardon the other knives) -- that's where the kuro-uchi is gone:

I am a fan of Zakuri -- the 65mm utility in my picture from the Carbon thread is one. Sara sent a nice thank-you note with it, too! Anyway, I find the more work you put into a blade, the more you bond yourself to it.
