Man, I tried buffalo for the 1st time tonight. I loved it. The box that it came in was labeled as medallion steaks, or soemthing like that. It was two individually cryo packs, 6 oz each. The meat was rubbed in something and cooked on the grill. They were cooked about 10 minutes and came off the grill medium rare.

It was like a really good steak, except it had slightly more flavor. It was not gamey in the least, as I guess it shouldn't be since it's not really wild.

Anyone else had these?

They sell buffalo burgers on the island of Catalina but I have never had a steak. I know they are leaner than beef but are they dry?

In Montana (at least in the upper NW corner) Buffalo is very common. Just about every place serves or sells it. I much prefer it to regular beef. Very tasty, not dry in the least and supposed to be better for you nutrition wise.

A few years ago I took a client to lunch at a small "trendy" restaurant here in T.O. and on the menu they listed clear Bison Soup and Bison Roast. I had both and they were delicious! Very flavorful without being overwhelming.

Properly raised Buffalo should have a much better Omega3 fat to saturated fat raitio than beef. Omega3's are the kind of fats that are absolutely essential to human health, but are the hardest to come by in the modern world. Excellent nutrition and very tasty stuff, too. :)

Yeah, I eat buffalo just about whenever I see it on a menu. I've had steaks, burgers, ravioli... I have a bag of buffalo jerky at home right now. There's a farm about an hour's ride from me that sells fresh buffalo meat. I've tried some of their gourmet sausages - excellent!

At all the powwows I've been to, I've gotten buffalo burgers that have been extremely good, much better than beef. Better for you, those buffalo aren't eating the crap that they feed cows!

Agreed, bison is awesome!

They have taken to selling steaks & sometimes ground meat here at our local grocery store. I eat it instead of beef as often as possible now - had the wife buy all of the steaks they had on display this past weekend (they never have too many) & we put a couple in the freezer!

If you can get a regular bison meat distributor, great. There are several buffalo farms near me that I can either get meat from them, or from the local grocery stores.

But, remember this before you stock up. A neighbor of mine bought something like 50 lbs (can't be that much, but thats what I remember) of meat, but it all went bad during a power outage last year due to the hurricane. Ten lbs at a time? Sure, no problem, but don't go all Michigan militia and stock up a whole meatlocker of it. ;)

Indeed SH - they only had maybe 5 or 6 steaks on display but loss of power is always a consideration for me... I know too many folks who lost entire freezers full of food last year.

Actually, as a result of this thread reminding me about it, I cooked up one of those steaks for lunch today - had half of it (pretty good sized), some mushrooms I grilled & some salad. Made for the best lunch I've had in a long time!!!

Seee ya,

James

There's a TexMex chain called "On the Border" in these parts that used to serve buffalo meat fajitas. It was fantastic. The meat had a slightly different grain that beef, no marbling, and a mild taste to it that was fantastic. Unfortunately they don't serve it any more, but I'm seeing Buffalo burgers cropping up almost as often as I see veggie burgers :footinmou

The diner I go to on a regular basis serves buffalo burgers.
