Much to my surprise, I snagged a great deal at a local store on a zebra "lunch box" and a cup that nests a nalgene with a little extra room. I tried out a double boiler method of bannock I saw on BushcraftUSA last night, but had a bit of the mix left over. Not one to waste good eats, I whipped up a batch of cheese soup, bacon and bannock for breakfast. Credit for the inspiration goes to matt.s from the before mentioned website.

I tried to make this as camp/hike friendly as possible. I used real cheese and real bacon, but powdered cheese and bacon bits could easily be used as well.

Dice up 2 thick slices of bacon and fry in your cook pot.. Fry the rest of the bacon whole and set aside. Put the bacon and bacon bits to the side. Drain excess oil into a pan for frying bannock. I added a bit more water than usual to make it more like a pancake and stirred in half a cup of shredded cheese. While this is frying, add a teaspoon of flour to the cook pot and stir around with the oil left in the pot. This makes a nice simple roux. Fill the pot 1/2 with water and bring to a simmer. Add in half a package of powdered milk, a palm-full of dried onions, an equal amount of dried mushrooms and 2 cups of shredded cheese. Take off the heat, let the cheese melt and pay attention to your bannock. Season to taste (I used salt and white pepper) and stir in the bacon bits when everything is ready to eat. Soon you'll have a tasty meal resembling this.

It's 36 and raining outside. This southern boy stayed in and cooked, but you get the idea. Next hiking trip this will definitely be part of the menu. I had enough mix to make 5 bannock cakes this size. 6 pieces of bacon, the soup and the cakes filled up 2 adults and a 6 year old boy with half the soup left, 2 cakes and a piece of bacon which will mysteriously disappear shortly...It's a good bit of food though, adjust accordingly to your needs.
