Not a full review but the best I could do after dark.
The knives came in today well packed and ready to go.
Took the 3V and the O1 proto #2 into the kitchen. Slicing onions, bell peppers, and slicing roast beef for philli steaks.
The O1 knife with the thicker handle scales did move the balance further back in the hand but is was not really noticeable. The biggest difference between the knives was the thicker scales fit my hand just a little better. Both knives made almost paper thin onion slices with little effort. The bell pepper was next and proved to be no challenge to either knife. The roast beef was sliced kinda like a hot knife through butter.
To be honest the proto knife fits me slightly better than the production knife and it was just a slight bit sharper out-of-the-box. However both knives work great, feels good in the hand, and cuts like a razor. Id be happy with either knife.
Thanks Dan for great knives.
