I purchased a Busse Steel Heart E earlier this year, perhaps in the early spring of 02. I still haven't had the opportunity to use it.
Once in a while, I take it out of my knife drawer and play with it. Handle it. What I love about these knives so much is that when holding them like a normal large knife-- handle in hand-- they have a powerful, large knife presence to them. Good, heavy choppers. A huge chunk of sharpened steel not to be trifled with. An irresistible force.
But by simply "choking up" on the knife and using the generous finger choil, the Steel Heart magically becomes another knife. A smaller, nimbler blade which can perform, or at least "seem" to perform, more delicate tasks.
The Busse line may not be able to perform every form of cutting job admirably-- because no knife can-- but it sure seems like it can perform any job adequately, in many instances where so many knives would fail.
