Busse Santoku Chef Knife?

I have always hoped Busse would make a chef knife, and apparently he has already done so:

The only information provided on the Busse Collector site is that this knife is called "XXXL Nick" and is made of INFI. No info is provided for length, thickness, or year made. There is also no mention of whether there were any other "Nick" blades (in L, XL, or XXL sizes) or whether the "XXXL" is just a clever name.

Does anyone have any information about this knife? I'd like to get as many details as possible so when I call the custom shop I'll know what I'm asking for.

You don't wanna call the custom shop looking for that. It'll cost you about $1,500.

For $500-700 you can post a WTB on the exchange. I sold one recently for $500 so I know that's the floor. I'm willing to bet for $700 people would be climbing over eachother to sell you one.

I find it far too thick. The Thin NICK (.125, I think) is much nicer. I love mine.
 
Thank you, Dennis! I think $1.5K for a chef knife is a little much for me. And the Thin Nick sounds like it would be better for me anyway - .125" is about perfect.

How long is the blade on the Thin Nick?

I hope mine get done one of these days. :D I have been chomping at the bit to use them around the kitchen. After many years of waiting, I don't have much bit left. :D:D:D

Progunner, get "Pro-active" maybe you will get one sooner.

I looked at but did not Buy a $1,600.00 Murray Carter Kitchen knife, but I sure would have paid up to about $800.00 to be able to take it home from the Blade Show West.

I would like to see more in the Busse Kitchen line, I got a Standard NICK for my Wife for when Durability is more important than perfect slicing in the kitchen or for when She does not want to oil a knife after use.

While the knife may not actually be stainless, it is close enough to suit me or my Wife in the Kitchen.

Garth is a busy man, I hate to bother him with a trivial order of kitchen knives if he has blades going out to the troops or something. Good things come to those who wait. :)
 
NICK is one of my favorites! XXXL NICK is an amazing chopper in the kitchen and outdoors.. The thin nick is great for fine slicing/cutting.
xxxl is .22" thick and the thin nick is .095"
