I finally used one of the Busse Elmax steak knives to cut two large 1.5" thick raw steaks into smaller pieces, and I was very impressed how easily they cut thru the meat. The .090" blade thickness AND hollow ground blade gives them a keen edge geometry for slicing. :thumbup:
 
The Elmax Steak Knives are surprisingly wonderful. They can definitely take a beating. Enjoy your fantastic little slicer!
 
Elmax is some amazing stuff. The new Max Duty and Max Warden that debut at Blade Show are sweeeet.

Man I can't wait for my black-handled one to get here from the ganza. I'm hoping it just has 'that' feel to it, you know, like you don't want to put it down :fingers crossed:
