I was asked to make a butcher knife for a guy that processes his own beef. Yes or no on this desgin.

hard to say with no sizes listed but it does look a hair short in the blade but i will say with the belly in it it shudl slice nice and go around joints true but a butcher truely needs more the one. the bull nose is jsut the most useful all in one but a joint popper and a good long steaking slicer.

You're doing it again. Stop diving in straight to cutting steel. Start with drawings. Make revisions to those drawings until most of the dimensions and details have been worked out. Then make a template out of a material that is easy to work with, like Masonite hardboard. That way you can hold it and see if you are on the right track. If so, then go to the steel.

Meat processing has many shapes. That is in between a skinner and a bull nose. Does he need a skinner, cimeter, gut hook, cleaver etc.

Ask him his favorite shapes and see which way he leans. Also see what handle he likes.

Need more than one . 10" butcher , 6" boning, 10" butcher's steel for sharpening , 20" butcher's saw. It's a big project!!
