Butcher Knives

Does anyone know of a source for quality butcher knives?A friend of mine processes alot of venison and is looking for a set.
 
dexter makes some decent boning knives otherwise try a local butcher ask where he buys his blades.

I worked in a pig plant for 2 summers (the last two!) and we used victorinox blades. They are low on the RC, so have a steel handy, and sharpen probably daily, but they will take apart hogs quite fine! I'm sure they can handle venison. Our local college sells them in their book store, as they have a meat cutting course there. Check out such places where you live.

Old Hickory butcher knives should be considered, too. Good 1095 carbon steel at a price that won't ding the budget. Good selection, too, with butchers in 6", 7", 8", 10", 12", and 14" (for really big deer?!), an 8" slicer, a 5" and a 6" boner, a cleaver, and a fair-to-middlin' steel available. There are a few Old Hickory sets available but even when the knives are purchased individually they still cost less than a lot of off-shore junk that come in sets.
