Ok, so I'm looking at buying an Edgepro but was wondering on which options / stones I should get. I will mainly be using it to sharpen chef knives and pocket folders (at least in the beginning.).

I settled on the Apex model but not sure on on which kit. Money really isn't a concern but I also don't want to blow money on a bunch of stones that I will never use.

I sold EPs a couple of years ago. When I started I sold all the kits. Just about everyone who bought one of the kits with the lesser stones... within a couple of weeks would be asking for the rest of the stones. So, my advice... get the kit that has all the stones in it.

Greetings Stevelenti: You may wish to order an additional 120 grit stone or two. Highly useful when doing a lot of re-profiling. One or two blanks are also a good idea. You can attach your own ceramic, diamond, or other honeing materials. I wish I had gotten the Edgepro sooner. OldDude1

Thanks all for the help!! @Splat: I was looking at Oregon Knife Shop and digging the free shipping. Probably pull the trigger later this week.

I ordered an Apex 2 kit today. My daughter is giving me this as my early Father's Day gift:D

Through the years, I have worn out a Norton oil bath three stone set, as well as a nice three stone LL Bean set.

I am looking forward to going 'high tech'.
