Like the title says those are the choices... Money is a concern, I can pick up the san mai around $50 cheaper than the 3V. I own my own business so I can carry it daily, It will see the most use in food preparation, cutting rope, boxes and when I take it to the woods. I don't have any experience with either the san mai or 3V steel, so feel free to offer your opinions. Thanks

I think I read that San Mai is going to be discontinued? If so, might want to try that steel?

I would pick up the San Mai version. For one it's likely to be discontinued in the near future and the 3V one is Cold Steel's replacement for when that happens. Although I don't have, or even used a 3V one, between my Sanmai SRK and Carbon V SRK, the Sanmai is the better slicer and to me would be more preferable for food prep. Otherwise all SRKs will perform fine for other tasks and in the woods.
