What company makes the Outfitter Series Hunting Knives for Cabelas ? Are these very good quality knives ?

From the ad it looks like they are roughly comparable to basic Buck knives. I'm surprised that the blade is not slightly harder. Either the steel is lower on alloying elements than it sounds like or the manufacturer specs the hardness low to allow for a loose heat treating process. It looks like you get your money's worth, but not a lot more than your money's worth. If you hunt game that is deer-sized or smaller it should get you through field dressing before you need to sharpen it.

If you have more money to spare I would look at the Cabela's Buck Alaskan Guide Series knives. These are made with S30V alloy blades that should hold an edge long enough to skin a moose or two.
