Lesson 1. If you want good sausage, get it from Louisianna. I've never had sausage I thought was worth a shit outside of Acadianna. I get my fix at Bourques. Give em a try, they ship in dry ice. Louisianna sausage is a fine meal all by itself. Their boudin is the real deal too. None of that bullshit little Adeles packages at your grocery store. Never had a piece of that Adeles that wasn't disgusting.

(No Cajun is raised believing that the rest of the world knows how to eat. Thought I'd leave y'all some bread crumbs. Nobody has ever tried this before, but maybe this can be learned. I hope they don't come try to take away my card for this.)

If you are from New Orleans, you are only a shirttail Cajun. More a creole person. Meh.

Thanks for the tip, Andy! I’ve traveled from new orleans to houston many times and always stop at the Best Stop Supermarket for my cajun fix. It’s legit. I bust into their boudin and cracklins before I leave their parking lot. I’ll try to make the detour north of there and check out Bourque’s one of these days. Thanks again.
 
Living in New England I so appreciate this post. Just made my first order—we got a big bash coming and we are planning to blow some socks off with delicious links from Bourques. Excellent.

I haven't tried Bourques, so I might have to make a trip. I dig Best Stop, and the pepper jack stuffed Boudin Balls from Billy's. My wife's "Swears By" list is: Best Stop for Boudin, Jacob's for Andouille (LaPlace), and Jerry Lee's for Hogs Head Cheese (Baton Rouge).

I grill my boudin. Keep the grill low and be careful turning it on the grill. I buy their smoked sausage. I like every bit I've had. The fresh sausage is great also. Those again I grill usually.

Wurrwulf Wurrwulf In Rayne, the little grocery was Trahan's. Deh had good boudin. Probably my favorite ever. Bourques is a blessing because of the shipping. I've never been there. Who goes to Port Barre Louisianna on purpose?
 
From one Coonass to another you owe it to yourself to head up to Marksville and go to Juneau’s. While Billy’s in Krotz Springs does have the best boudin balls, Juneau’s has the best boudin, steamed or smoked.
Also get on down to Bourgeois near Thibedoux for some jam up beef jerky.

Getting back to the topic of sausage I’ll put a batch of my smoked against anyone’s. Unless you want fresh then you gotta see TJim in Cottonport.

Ahhh... the mythical Trahan's. I've only heard legend and have never had the pleasure. A bit closer to my home, Bourgeois Meat Market in Thibodaux/Schriever has great smoked tasso.

I'm more of a Smoked Boudin guy in regards to prep, but when it's quality Boudin, it's hard to screw up.

Jacobs also has really good smoked sausage. I make a trip a couple times a year to stock up. Heavier smoke flavor than most. Goes great in red beans or jamabalaya.

Jerry Lees is good, but there is better. Best boudin I ever had used to be from a little gas station called Veillon’s in galvez but it’s not as good as it was 15 years ago.

Y’all should try boudin sandwich. Skinned out boudin on a New Orleans French bread hunk with mayonnaise. I like a pickle slice or two also.

One?!? That’s not worth the trip. Gotta be careful though. I stopped at one of those gas station/plate lunch places once. I bought a bag of 3 fried boudin balls. They should have called them ‘sack o sharts’. That drive to the next town was an episode of colonic distress and taking stop signs as suggestions.

I make boudin and fried egg sandwiches for breakfast sometimes though. Lightly fry the skinned boudin in olive oil, fry the egg in a little butter and slap on bread with a touch of mayo. No wonder I have trouble keeping my cholesterol under control...: lol
