Hey guys! I've had my edge pro for awhile now... long enough to see some ups and downs and to get relatively comfortable with using it. One problem i have encountered with almost every knife i sharpen is that when i switch sides, it doesnt seem like the same part of the blade is being hit. Example 1.... I reprofiled my para 2 20cp last night. I spent more time reprofiling holding left sharpening right because it visiually showed the reprofile happening. i switch to holding right sharpen left and go through the same process, and the edge seemed almost to stay the same other than the bur i had to remove from the other side. Example 2.... i go through the same thing sharpening any other knives. My manix 2 holding left sharpening right hits the edge perfectly on 40, but on the other side just hits a small portion of the edge. In conclusion, i hold the knives the exact same way on both sides of the sharpener and see different result regardless of pressure, fast or slow, etc.
im getting my knives razor sharp but i worry about the grinds on both sides not matching up.

From your description of the problem, there are only 2 possibilities. One you are not keeping the knife firmly resting on the blade table or two ( my guess ) that the blades you are sharpening do NOT have equal angles on them. Many blades, as sharpened at the factory, are not equal each side and 5° difference is possible. Make sure not to alter any settings when changing hands and with time both sides will even up.
 
The EXACT same thing happens to me when I sharpen with my ep. I posted a thread just like this a week or two ago. This is the best answer I got and I hope it helps. Spend the same amount of time on each side. Count your strokes on each side. Are you spending the same amount of time on each side? What I was doing was when I put the mark from a sharpie on the edge I would stay on that side until the mark started to go away. The sides wouldnt take the same amount of time to make that happen. So I was spending more time on one side than the other. Now I count all of my strokes and just keep switching sides until the mark is gone on both sides (seems to of fixed the problem). The prior posts have probably answered your question. I'll only add that beyond holding the knife steady on the blade table, it's important to keep the knife in the same horizontal position. Moving the blade from side to side will cause an angle change if there is any curve in the blade shape.
