Gossman’s ( yes - I had a serious addiction to Scott’s knives ).

Anything pictured above would make an excellent camp knife - some carve and some chop, others do both.

Too many good makers to list but bang for the buck is cold steel. Natchez, Laredo big bowies are in 3v with linen handles. Trailmaster and Recon Scout in 3v with rubber handles, well worth doing custom handles. Ontario and BKT Kabar are very good too.

SET - Sargent edged tools. Maker out of Oxnard California, one man operation, small batches of different models multiple times each year. The pictured knife is a M4-6 Screaming Eagle in 80crv2.. a fairly rare model
 
There are several Gossman knives I would enjoy trying out, but I have never been able to buy one from the maker.

I think a good substitute for the larger Gossman knives is a Carothers Performance, and they are substantially easier to obtain (which isn’t saying much). Try a Friday sale for a Carothers Light or Medium Chopper.
 
For big (8-10 inch) blades Busse/swamp rat/sykco and Carothers are the two big names I'm familiar with. Busse will be the easiest to get unless you want an older model, while carothers are a bit harder to attain.

Rmj does some good stuff too but it's a bit more tactical.
