Hi,
I tried to reprofile a kitchen knife made with X40cr13 steel but I can’t get it perfect on one side after a long time sharpening.
I used the same 220 grit stone so it’s not because of the difference of thickness between the stones.

Somedy know what am I doing wrong?
Thanks

About your picture, is the apex on the left? If so it looks like you are not reaching the apex with your stone, and it looks like your 220 is glazed as the bevel looks pretty polished.

Yes that’s the apex on the left.
So should I try to flatening the stone with the silicon carbide before to try again?

Yes, it looks like you just haven't finished reprofiling and that your stone isn't cutting as well as it should. Granted the 220 isn't the fastest for reprofiling but I do understand your concern with varying stone thicknesses if you don't have a way of compensating for it.

Use a sharpie marker on the edge and then take a couple more passes on it to show you exactly what is being removed.

Go to the Edge Pro site and watch some of their videos, if you have not already.
